coconut lime flavoured energy.

As many people can relate, I'm sure, the new year brought my desire to live healthier. This is a difficult endeavour for anyone to embark on but when you can have delectable treats with the twist of a whisk...well...lets just say the road feels a bit rockier. 
However(!), it is my mission to add some scrumptious sweet-treats to the blog this year that you don't need to feel guilty about indulging in. That being said, I still plan on enjoying good-ol'fashioned baked goods once in a while, perhaps just less often. 



Ingredients needed:  1 c. raw unsalted cashews, 2c dried pitted dates,

1c unsweetened coconut, 2T lime juice, 1T lime zest, pinch of salt 




• Soak dates (if hard) in warm water and drain.


• Add all ingredients into food processor and pulse, pulse, pulse!


Note: Taste as you go! I prefer a lot more lime juice than most. If the texture does not hold together, add more dates.


• Roll mixture into balls and roll in extra coconut.


• Refrigerate and enjoy! 



It's really that simple! If you don't have a food processor, you need to get one. It will change your life. I've listed a couple here that are easy to use!
