Who doesn't love pancakes? My all-time favourite breakfast is one pancake, one soft poached egg, 2 strips of bacon, and a fruity smoothie on the side. Yum. I don't indulge in this breakfast very often but when I do, this is the recipe I use. 



1.25 cups flour,

1t baking powder, 1t baking soda,

1 egg,

1.25 cups milk,

1T lemon juice,

2T melted butter, 0.25 cup sugar, pinch of salt






  1. Heat griddle over medium heat

  2. Sift all dry ingredients into one bowl

  3. Create a "well" in the middle of the bowl

  4. Whisk together wet ingredients
    *Make sure butter has cooled before whisking with egg!

  5. Pour the wet ingredients into the well

  6. Mix ingredients together until you no longer see any flour streaks
    *Do not over-mix!

  7. If you are not using a non-stick griddle or pan, lightly grease the pan with oil.
    *Do not grease a pan with butter...it will likely burn before your pancake is cooked

  8. Pour about 1/4 cup of batter onto preheated griddle (I use an ice-cream scoop)

  9. Flip pancake when bubbles form and sides have pulled away from the griddle

  10. Let pancake cook for approx. 2 more minutes or until the bottom is a light golden colour

If you're feeling creative add in berries or chocolate chips AFTER you've spooned the batter onto the griddle. Adding these ingredients into the batter prior to this step will result in all of those extras sinking to the bottom. I also recommended mixing in a teaspoon of coriander, cinnamon, or nutmeg with your dry ingredients for a little something extra. 


Serve with your favourite syrup and enjoy!
